The traditional tandoor is a vertically oriented, cylindrical oven with thick insulating walls. Its heat source-typically wood, charcoal, or gas-is located at the base. The oven is designed to operate at high temperatures, often reaching up to 480°C. Food is introduced through the top opening and typically cooked by adhering it directly to the hot inner walls, allowing for rapid heat transfer and flavour development.
The design of the tandoor enables it to retain heat effectively over extended periods, ensuring uniform cooking conditions and excellent fuel efficiency. Its cylindrical shape enhances natural convection, creating ideal conditions for roasting, baking, and grilling.
Materials for tandoor construction
For self-build projects, it is essential to use materials specifically developed to withstand direct flame exposure and high thermal cycling. A refractory fire cement can be used to assemble the inner thermal body, offering excellent adhesion and heat resistance. For a smoother finish or cast surface, a heatproof screed provides structural stability and enhanced thermal insulation.
